Ciolli, Podere Ciriolino, Red

Podere Ciriolino is made from a selection of Cesanese di Affile grapes (100%) sourced from four vineyards planted at different times.

The grapes are hand-harvested when they have reached optimal ripeness. Grapes from the various vineyards are fermented separately in cement tanks. Fermentation is spontaneous and lasts for approximately 10 days. After racking, the wine matures in cement tanks on its fine lees for about a year. Before bottling, the different batches are blended together. After bottling, Podere Ciriolino ages for an additional 3 months.

It’s a London Dry-style gin with botanicals typical of the Roman and Lazio region and cuisine. In addition to juniper, you’ll find the same blend of peppers we use in our carbonara, and Roman mint, which has always been used to enhance artichokes and other dishes in our tradition.
