‘Tenuta Arcamone’ is one of the ‘historic’ estates of the De Carlo family, and it has been under organic cultivation since 1990. The cultivar is Coratina, which in this microclimate has managed to naturally rebalance its production cycle without the use of any chemical substances. This oil expresses the unique characteristics of its territory, concentrating them into a blend of aromas and flavors.

With its green color and golden reflections, slightly veiled, it is elegant and complex on the nose, characterized by broad and harmonious vegetal notes of fresh field herbs.

Balanced, slightly bitter, with a pronounced and persistent spiciness, it is rich in vegetal tones of artichoke and green almond.

The bold character of this oil allows it to be paired with grilled vegetables, grilled porcini mushrooms, mixed legume soups, tomato salads, and vegetable minestrone.

With its intense green color, it opens up on the nose with a wide and elegant bouquet. The scent of olives and freshly cut grass is clean, with vegetal notes of artichoke.

Sweet at first, it reveals a pronounced bitterness and intense, persistent spiciness that teases the palate with a lasting sensation of vitality.

Torre di Mossa olive oil fully expresses its personality on simple grilled bread but is also ideal for use raw in meat-based dishes, legume soups, grains, meat carpaccio, and flavorful pasta dishes.

Ventoso di Maestrale Extra Virgin Olive Oil

The ‘Ventoso di Maestrale’ extra virgin olive oil is produced from olives harvested in the Bitritto region.

The olives, of the Ogliarola Barese and Coratina cultivars, are collected directly from the tree and processed within 24 hours in the company’s mill.

During production, it has a green color which evolves into a straw yellow with green reflections as it matures.

On the nose, you can detect hints of artichoke and green almond. The taste is soft and well-balanced, characterized by notes of fresh herbs and sweet almonds in the finish.

‘Ventoso di Maestrale’ is an oil that can be used in cooking to enhance the flavor of any dish without altering the unique characteristics of the raw ingredients used. It is ideal for boiled or roasted fish, seafood fry-ups, sauces, and roasted meats.
