Piennolo tomatoes are a small tomato unique to Mt. Vesuvio south of Naples where they grown at altitudes of 450 meters in mineral rich volcanic soils.
They are known as the sweetest tomato in the world – and that is why they are used in so many of Rimessa’s recipes!
Pacchetella is a local style where the Piennolo tomatoes fillets are cut leaving their skins on, a little salt added and then preserved. Perfect for bruschetta, pasta sauces, over fish or as a main ingredient in 3 Pomodori pasta sauce.
