Grapes: 100% Sauvignon. Coming from a small producer, this Sauternes is produced exclusively for several passages in the vineyard to pick the grapes most affected by “Botrytis cinerea”. The noble marking stretches the skin of the grape and allows the water to evaporate. Concentrates the sugars and pectins of the pulp and reveals the bouquet and aroma. Unfortunately, too many smallholders do not have the means to carry out these steps and therefore compensate for the lack of natural sugar with a must sugar. This method gives lean, sweet and vulgar wines, devoid of bouquets.
